Congratulations to The Inn at Little Washington are in order, as its  record 24-year 5 Diamond restaurant rating from AAA remains unbroken!

See DC smallNorth America’s largest motoring and leisure travel organization unveiled its 2012 Five Diamond Lodgings list was unveiled recently, and the esteemed resort’s restaurant remains securely in place.

Led by chef and proprietor Patrick O’Connell, The Inn at Little Washington’s restaurant is a “food fantasy,” according to Washington Post restaurant critic Tom Sietsma. “The only reason I know I’m not in a chateau in France is that everyone in this gilded oasis is speaking English.”

Here, we see the Chef’s play on the classic Wellington, using tuna in place of beef. The fish was wonderful, a great combination of cooked and rare, and came enrobed in enchanting layers of crispy potato. The tuber’s almost hash brown-like savor played the part of a fantastic foil to the fish, adding superb starchy and salty notes to the dish–I wanted more!
